Indian 'Chai' (tea)
Britain is famous for it's 'cup of tea' though I thought it would be appropriate to bestow upon you the original recipe from which this British tradition was derived. India is famed for its' wonderful, unique and delicious food and drink but one of it's most famous and favourite, national drinks is the Indian Chai. :)
(makes 2 mugs/teacups of chai)
Ingredients:
1 mug/cup water
1 mug/cup semi skimmed/full fat milk
4 tsps sugar
2 level tsps looseleaf black tea
0.5 tsp grated ginger

Ingredients:
1 mug/cup water
1 mug/cup semi skimmed/full fat milk
4 tsps sugar
2 level tsps looseleaf black tea
0.5 tsp grated ginger
5 crushed cardamom pods
1 tsp ground cinnamon
5 black peppercorns
4 cloves
Optional extras for the best flavour and aroma:
5 mint leaves (torn into halves)
1 inch long sprig lemongrass
Method:
Place all of the ingredients above into a pot in the above order. Bring the mixture to a boil on a medium to high heat and then simmer for 10 minutes. Sieve the mixture through a strainer into a mug or teacup and drink while hot.
You can drink this Chai on it's own or it can be served with the Thikhi Puris (click here).
